材料:
- 日本油揚 1袋
- 粉絲(浸至軟身)1包
- 雞扒 1塊
- 冬菇(浸至軟身)2隻
- 小瑤柱(浸至軟身)10粒
- 甘荀(切小片)10片
- 韭菜 1紮
醃料:
- 鹽 1/2茶匙
- 糖 1茶匙
- 酒 1茶匙
- 生抽 1茶匙
- 生粉 1茶匙
芡汁調味料:
- 水 1/2杯
- 蠔油 1湯匙
- 生抽 1茶匙
- 糖 1/2茶匙
- 鹽 少許
- 麻油 1/2茶匙
- 生粉水 1湯匙
做法:
- 用熱水泡一泡油揚去掉過多油分,擠乾水份切半
- 雞扒切塊、醃15分鐘
- 將韭菜放入小鍋,加一湯匙水煮3分鐘至軟身
- 將雞扒、冬菇、瑤柱、甘荀、粉絲放入油揚
- 用韭菜打結
- 百寶袋放入鍋內,加入冬菇水、瑤柱水,中小火煮10分鐘至熟。
- 餘下的湯汁續加芡汁調味料煮滾將芡汁倒上百寶袋上即可
Tofu Wrapped – Lucky Pocket
Ingredients:
- Japanese Deep Fried Tofu 1 pack
- Vermicelli (soak until soften) 1 pack
- Chicken Fillet 1 piece
- Shiitake Mushroom (soak until soften) 2 pcs
- Small Scallops (soak until soften) 10 cloves
- Carrot (cut small pieces) 10 pcs
- Chives 1 bunch
Marinade:
- Salt 1/2 tsp
- Sugar 1 tsp
- Wine 1 tsp
- Soy Sauce 1 tsp
- Potato Flour 1 tsp
Starchy Sauce:
- Water 1/2 cup
- Oyster Sauce 1 tbsp
- Soy Sauce 1 tsp
- Sugar 1/2 tsp
- Salt - little
- Sesame Oil 1/2 tsp
- Potato Flour water 1 tbsp
Method:
- Soak the Natto with hot water to pour out the oil, drain and cut into half.
- Cut and marinate the chicken fillet for 15mins.
- Put the chives into the sauce pan, pour in 1 tbsp of water and cook for 3mins to soften.
- Stuff the Natto with chicken fillet, Shiitake mushroom, scallops, carrot and vermicelli.
- Tie up by chives
- Place the lucky pocket into the pan, pout in the shiitake mushroom and scallop water, cook with medium low heat for 10min until fully cooked.
- Mix the soup with the starchy sauce ingredients and boil.
- Pour the sauce on the lucky pocket. Serve.
Tahu warna dan Bean Curd puff dengan Udang Roe
Bahan:
- Tahu 1 batu bata
- Bean Curd Puff Saya pak *
- Bawang 1/4
- jamur musim dingin 3 (diiris)
- wortel 5 slice
- bawang merah 1 potong
- bawang putih 2cloves (diiris)
- jahe 4 iris
- Udang Roe 1 sendok makan
bumbu:
- Garam 1/4 sendok teh
- Gula 1/4 sendok teh
- saus tiram 1 sendok teh
- lada sejumput
- minyak wijen 1/4 sendok teh
- Saus Kedu hitam 1/4 sendok teh
- Air 200ml
Cara memasak :
- Tumis udang dengan minyak, sisihkan.
- Goreng tahu sampai renyah. Menyisihkan.
- Mencuci kacang dadih puff, tiriskan.
- Panaskan minyak di wajan, jauhkan jahe dan bawang putih, tambahkan bumbu bumbu, tahu dan kacang dadih dan semua sayuran. Bawa sampai mendidih, kocok saus dengan campuran tepung jagung. Taburi udang roe. Siap untuk di hidangkan.
