紅燒肉
Braised Pork Belly
Perut babi direbus  

紅燒肉  

材料:

  1. 五花肉600克切塊
  2. 乾辣椒1隻
  3. 薑3片
  4. 葱白2條切度
  5. 八角2粒

調味料:

  1. 鹽1/4茶匙
  2. 冰糖1茶匙
  3. 黄酒300ml
  4. 水沫過豬肉
  5. 老抽1茶匙

 煮法:

  1. 鑊燒熱,放入五花肉煎至兩面金黃色拿起
  2. 鑊放入油,放入冰糖小火炒溶至焦糖色,放回豬肉炒勻,放薑,乾辣椒,八角炒香,加入黃酒,調味料,水,小火煮約一小時然後大火收汁即成

Braised Pork Belly  

Ingredients:

  1. Pork belly 600g - chopped
  2. Dried Chilli x 1
  3. Ginger 3 slices
  4. Spring Onion 2 bunches
  5. Star anise x 2

 Seasoning:

  1. Salt 1/4 tsp
  2. Crystal Sugar 1tsp
  3. Yellow glutinous wine 300ml
  4. Water - enough to cover pork
  5. Dark Soy Sauce 1 tsp

Methods:

  1. Heat the wok, pan fry the pool belly until both sides golden. Set aside
  2. Add oil in a wok, put in crystal sugar, stir fry in low heat until it turns into caramel colour. Put back in the pork, add in ginger, chili and anise, stir well. Pour in wine, seasoning and water, cook in a low heat for around an hour. Reduce the sauce in a high heat. Serve

Perut babi direbus  

Bahan:

  1. Daging babi 600g - cincang
  2. Cabe kering x 1
  3. Jahe 3 iris
  4. Bawang Spring 2 tandan
  5. Bintang anise x 2

  Bumbu:

  1. Garam 1/4 sdt
  2. Crystal Sugar 1tsp
  3. Anggur ketan kuning 300ml
  4. Air - cukup untuk menutupi daging babi
  5. Saus Kedelai Gelap 1 sdt

  Cara memasak :

  1. Panaskan wajan, tumis tumis perut kolam sampai kedua sisi emas. Menyisihkan
  2. Tambahkan minyak ke dalam wajan, masukkan gula kristal, tumis dalam api kecil sampai berubah menjadi warna karamel. Masukkan kembali daging babi, tambahkan jahe, cabe dan adas manis, aduk rata. Tuangkan anggur, bumbu dan air, masak dengan api kecil selama sekitar satu jam. Kurangi saus dalam api yang tinggi. Melayani
